Cultured Butter

Over the last few weeks, Joaquin has become a remorseless butter eating machine. He started eating it plain, like dessert, on weekends, a few months ago when I’d bake biscuits for breakfast and bring a plate of butter to the table. But now he’s seeking it every day, 2-4 tablespoons of it per day. Knowing how important fat is for our cells and neurons, and how wonderfully nourishing butter is for growing children, my guess is that his body is wanting it and using it very well.

So, just like with everything else he comes to love, it was just a question of time before Joaquin came up with the idea to make our own. Yes! I said… And of course we will culture the dairy before making it. A quick internet search revealed directions for homemade cultured butter, and Joaquin was thrilled to find four bars of it last Sunday, when he came tired after his weekend hikes.
