Dairy-Free Chocolate Ice Cream

I churned and freezed it for ice cream, but next day trying to soften it I moved it to the fridge for a few hours. Eaten this way, it made us think of mousse or pudding.

Instructions

In a Vitamix blender, process until creamy:

  • 1 cup soaked walnuts
  • 1 cup soaked cashews
  • 2 cups filtered water
  • ¼ cup cocoa powder
  • 6 medjool dates
  • 2 tbsp coconut oil
  • 1 tbsp honey
  • 2 pinches salt
  • vanilla extract

Freeze and stir every 45 mins (ice cream is ready in about 5 hours)

Potential Variations

Use coffee instead of water for mocha ice cream.
Infuse water with fresh mint leaves for chocolate mint ice cream.
